Chunky Sweet Ranger Cookies
...my twist on the betty crocker "ranger" cookie recipe

½ cup butter
½ cup granulated sugar
½ cup packed brown sugar
½ teaspoon baking powder
½ teaspoon baking soda
1 egg
1 teaspoon vanilla
1 ¼ cups all-purpose flour
1 cup rolled oats
1 1/3 cups flaked coconut
½ cup dried cherries
½ cup dried cranberries

1. Beat butter 30 seconds. Add granulated sugar, brown sugar, baking powder, baking soda: beat till combined. Beat in egg and vanilla. Beat in as much of the flour as you can. Stir in remaining flour. Stir in oats, coconut and dried fruit.
(I ran the fruit through the food processor to break it up a little bit)
2. Drop by rounded teaspoon 2 inches apart on an ungreased cookie sheet. Bake in a 375` oven about 8 minutes or till edges are golden. My oven cooked for about 12 minutes till the cookies edges were golden. The first batch was gooey at the 8 minutes mark. I found about 12-14 minutes was about perfect…depending on the size of cookie.
Cool on cookie sheet 1 minute. Transfer to a wire rack; let cool.
I doubled the recipe… because it never makes what the cookbook says it should.
They are super good… and low fat. Only 60 calories per cookie.
